Healthier Strawberry Tiramisu

- 500 g strawberries
- 3 tbsp coconut sugar
- 50 g mascarpone
- 250 g low-fat quark or Greek yogurt
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 100 g ladyfingers
- Cocoa powder for dusting
Wash and remove the stems from all the strawberries. Puree 100 g of the strawberries with 1 tbsp of coconut sugar and set aside in the refrigerator to chill.
In a large mixing bowl, combine the mascarpone, quark (or Greek yogurt), 2 tbsp of coconut sugar, lemon juice, and vanilla extract. Mix until smooth and creamy. Cut the remaining strawberries into small pieces and gently fold them into the mascarpone mixture.
Line a baking tin or dish with a layer of ladyfingers. Spread half of the strawberry puree over the ladyfingers. Add a layer of the mascarpone and strawberry cream over the puree. Repeat the layers, finishing with a layer of the mascarpone cream on top.
Cover the tiramisu and let it set in the refrigerator for at least 4 hours, or overnight for best results. Before serving, dust the top with cocoa powder for a classic finish.
Substitutions: You can substitute Greek yogurt for quark, or use honey/maple syrup instead of coconut sugar.
