Lemon & Blueberry Baked Oats

Ingredients
  

  • 2 ripe bananas mashed
  • 1 tbsp honey or maple syrup
  • 1 tbsp olive oil
  • Zest and juice of 1 unwaxed lemon
  • 370 ml milk of choice
  • 200 g oats
  • 60 g vanilla plant protein powder optional
  • 1/2 tsp baking powder
  • 80 g fresh or frozen blueberries

Instructions
 

  • In a large bowl, combine the mashed bananas, honey or maple syrup, olive oil, lemon zest, lemon juice, and milk. Mix well until fully blended.
  • Stir in the oats, vanilla plant protein powder, and baking powder until well mixed.
  • Gently fold in the blueberries, being careful not to crush them.
  • Pour the mixture into an oven-proof baking dish. Bake in the oven at 200°C (or 180°C fan) for 35-40 minutes, until golden brown and set.
  • Allow the baked oats to cool slightly before slicing. Serve with yogurt, fresh fruit, or a drizzle of peanut butter.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 5 days. Reheat before serving or enjoy cold.
Vegan Option: Replace honey with maple syrup and use plant-based milk to make the recipe vegan.
Muffin Tins: You can also bake this recipe in muffin tins for individual portions. Adjust the baking time to 20-25 minutes.
Mix-ins: Feel free to add nuts, seeds, shredded coconut, or chocolate chips to customize the recipe.
