Lemon & Blueberry Baked Oats

- 2 ripe bananas mashed
- 1 tbsp honey or maple syrup
- 1 tbsp olive oil
- Zest and juice of 1 unwaxed lemon
- 370 ml milk of choice
- 200 g oats
- 60 g vanilla plant protein powder optional
- 1/2 tsp baking powder
- 80 g fresh or frozen blueberries
In a large bowl, combine the mashed bananas, honey or maple syrup, olive oil, lemon zest, lemon juice, and milk. Mix well until fully blended.
Stir in the oats, vanilla plant protein powder, and baking powder until well mixed.
Gently fold in the blueberries, being careful not to crush them.
Pour the mixture into an oven-proof baking dish. Bake in the oven at 200°C (or 180°C fan) for 35-40 minutes, until golden brown and set.
Allow the baked oats to cool slightly before slicing. Serve with yogurt, fresh fruit, or a drizzle of peanut butter.
Storage: Store leftovers in an airtight container in the refrigerator for up to 5 days. Reheat before serving or enjoy cold.
Vegan Option: Replace honey with maple syrup and use plant-based milk to make the recipe vegan.
Muffin Tins: You can also bake this recipe in muffin tins for individual portions. Adjust the baking time to 20-25 minutes.
Mix-ins: Feel free to add nuts, seeds, shredded coconut, or chocolate chips to customize the recipe.
