olive oil

shallot
finely chopped

tsp
curry powder

tsp
paprika powder

garlic clove
minced
2-3
twigs of fresh thyme
optional

zucchini
chopped

minced beef
or plant-based mince
Salt and pepper to taste
Cooked basmati rice

hummus
thinned with hot water
Fresh cilantro
chopped
Chili flakes
Instructions
Heat olive oil in a pan over medium heat. Sauté shallot until translucent.
Stir in curry and paprika powders, and garlic. Cook for a minute.
Add zucchini and cook for 2-3 minutes.
Mix in minced beef and thyme. Cook until beef is browned, stirring occasionally. Season with salt and pepper.
Serve the beef and zucchini mixture over rice, topped with creamy hummus. Garnish with cilantro and chili flakes.
Notes
Swap beef with chicken, turkey, or plant-based mince as per preference.
Use onions or green onions if shallots are not available.
Store the beef mixture in the refrigerator for up to 3 days.
