Beef Hummus Bowl

A quick, healthy and high in protein dinner recipe for one

Ingredients
  

  • 2 tbsp olive oil
  • 1 shallot finely chopped
  • 1 tsp curry powder
  • 1 tsp paprika powder
  • 1 garlic clove minced
  • 2-3 twigs of fresh thyme optional
  • 1/2 zucchini chopped
  • 150 g minced beef or plant-based mince
  • Salt and pepper to taste
  • Cooked basmati rice
  • 3 tbsp hummus thinned with hot water
  • Fresh cilantro chopped
  • Chili flakes

Instructions
 

  • Heat olive oil in a pan over medium heat. Sauté shallot until translucent.
  • Stir in curry and paprika powders, and garlic. Cook for a minute.
  • Add zucchini and cook for 2-3 minutes.
  • Mix in minced beef and thyme. Cook until beef is browned, stirring occasionally. Season with salt and pepper.
  • Serve the beef and zucchini mixture over rice, topped with creamy hummus. Garnish with cilantro and chili flakes.

Notes

  • Swap beef with chicken, turkey, or plant-based mince as per preference.
  • Use onions or green onions if shallots are not available.
  • Store the beef mixture in the refrigerator for up to 3 days.
